Healthy Rice Krispie Treats
Made with homemade gelatin rich marshmallows.
6 TBS Gelatin
1 Cup Cold Water
1/2 Cup Water (yes a separate measurement of water)
2 Cups Honey (you could use maple syrup too)
pinch of salt
4 tsp Vanilla Extract
3 TBS melted butter
16 Cups of healthy puffed rice cereal (we used an organic rice cereal, you could use traditional Rice Krispies too.)
This recipe fills 2, 9 by 13 pans. You can cut it in half for one 9 by 13. Grease you pans or pan with butter.
Begin by blooming your gelatin. To a stand mixer add 1 cup water and sprinkle the 6 tbs of gelatin on top. Allow to bloom.
in a sauce pan add 1/2 cup water and 2 cups honey. Heat this and stir occasionally. Bring to a boil. While that is heating measure out rice cereal into a large bowl.
Once the honey and water mixture coming to a rolling boil allow to boil a minute or two.
Begin whisking water and gelatin with whisk attachment on mixer. Slowly add the hot honey mixture. Very slowly. This will take a while but have patience. It will eventually whip up in fluffy white melted marshmallow consistency. Add salt and vanilla.
Once the marshmallow portion has whipped up pour it over rice cereal along with melted butter and mix well. Then with buttered hands press into buttered pans.
Refigerate a few hours before popping out of pans and cutting into squares.
